Onyx & Amber didn’t start as a whiskey company. It started as a decade of genuine immersion — over 150 single-barrel selections, years of watching what Colorado’s barometric pressure swings and dry mountain air do to whiskey that nobody else was paying close attention to. What we learned is that the right barrel, aged in the right place, becomes something that can’t be made anywhere else.
The Private Blending Program puts those barrels in your hands.
You and your group taste through a curated selection of aged expressions — each one shaped by Colorado’s climate into something richer, more viscous, and more layered than the same distillate aged anywhere else. You decide what your blend becomes. The percentages, the balance, the profile. When it’s right, we bottle it under your name. When it’s gone, it’s gone. No two blends are ever the same, and yours will never be made again, not because of a rule, but because the barrels that made it will never exist in quite this way again.
That’s not a selling point. That’s what happens when time, place, and the right barrels converge.
What to expect
STEP ONE
Taste
We prepare a curated lineup of 3–5 barrel samples — each one aged between 7 and 17 years, drawn straight from the wood, shaped by Colorado into something the same distillate couldn’t become anywhere else. You taste straight from the barrel, the way it was meant to be assessed. No cocktails, no dilution. Just the whiskey.
STEP TWO
Blend
Working with our team, you specify the exact percentages of each whiskey in your blend. You taste as you go. You adjust until the glass tells you it’s right. There’s no wrong answer — only what works for your palate and your group.
STEP THREE
Bottle
We produce your batch exclusively, with a personalized label designed for your group. Sessions are held at our Denver warehouse and run about an hour and a half. We bottle a minimum of 72 bottles at $100 each. We recommend arriving without a plan to drive — the pour is worth it.
